Five patriotic treats to prepare for a kite-flying party at home on 15th August

Are you inviting friends and relatives over this Independence Day for kite-flying and a day-spend over? You can make arrangements for all activities like bringing kites, soft drinks, etc., but what about the food? Have you planned the menu to prepare for the party?

Restaurants will be shut till about 2 pm, so if you are planning to order the food from outside, it might not be a good idea. How about trying some quick and interesting dishes at home? You can celebrate the spirit of Independence Day with preparing tri-coloured dishes and desserts.

Here are five easy to cook dishes that you can begin preparing for now in terms of the ingredients required.

Tricolour bread pakora sandwich

Ingredients needed

White bread slices, tandoori mayonnaise, mint mayonnaise, gram flour (besan), caraway seeds, red chilli powder, turmeric powder, salt, water, and oil for frying

Method

Take a bread slice, spread tandoori mayonnaise on it and cover it with another bread slice. On the second layer, spread some mint mayonnaise and top it up with one more slice of bread.

For the batter, in a bowl, add the rest of the tandoori mayonnaise, gram flour, caraway seeds, salt, red chilli powder, turmeric powder and water to mix and prepare a thick paste.

For frying, heat oil in a frying pan and once the oil is hot, dip the sandwiches in the batter and gently drop them in the oil.

Take it the pakoras, cut into half and serve. You can keep tandoori mayonnaise, green mint sauce, and white mayonnaise on the side with the pakoras.

Tri-coloured cocktail idlis

Ingredients needed

Idlis

Idli batter (rava or rice), tomato chutney, green coconut chutney, cooking soda or Eno sachet, oil for greasing

Tomato chutney

Ripen tomatoes, fresh grated coconut, red chillies, chana dal, tamarind pulp, oil and salt

Green coconut chutney

Coriander leaves, mint leaves, fresh grated coconut, green chillies, tamarind pulp, oil, and salt

Method

Separate the idli batter into three portions and three vessels. To one portion of the batter, add some tomato chutney and to another, add some green chutney. Leave the third the portion of the batter as it is. Mix the red and green batters nicely to get the desired orange and green colours.

Add a pinch of soda or Eno salt to each portion and pour a teaspoon of each portion in separate idli stand plates after rubbing a drop of oil and spreading it inside the impressions.

Place the plates over the stand in the steamer and over the gas. The steaming time would be 10-12 minutes after which you can open the steamer.

After five minutes, take a sharp knife and remove the idlis from the sharp edges.

Pasta salad

Ingredients needed

Tri-coloured fusilli pasta, virgin olive oil, salt, lemon juice, chopped parsley, diced red onion, cucumber, tomato, and carrot.

Method

Blanch the pasta and keep aside for cooling. Next, take a big bowl and combine all ingredients except the lime juice, olive oil, and salt. Mix them till perfection.

In a smaller bowl, mix salt, olive oil, and lime juice and pour the dressing over the salad. Mix and toss all the ingredients well and season with parsley. Serve cold in shot glasses or bowls.

Spiced rice

Ingredients

Basmati rice, salt, oil, carrots, tomatoes, turmeric, sambhar masala, coconut milk, cumin seeds, onion, garlic-ginger paste, freshly grated coconut, mint leaves, coriander leaves, green chillies, poppy seeds, garam masala

Method

Take a pan and put a half teaspoon of the vegetable oil and add one cup of rice stir-frying it for about a minute on medium heat. Take off the stove and put it in a container. Repeat the same procedure with two more cups. Add 2 cups of water and a pinch of salt as per your taste and mix well.

To the second container, repeat the procedure of the first. For the one, you need to add salt, cumin seeds, coconut milk, and water. Place the three containers in a pressure cooker and allow them to get cooked. Now take out the rice and place each container on separate plates.

For the orange rice, make a puree of carrots and tomatoes to make a smooth paste. Head some oil in a pan, add turmeric powder and sambhar powder stirring it a couple of times. Add the prepared orange puree and allow it to cook for a couple of minutes. Once the paste is ready, pour it over the white rice on a plate and mix till the complete colour changes to orange.

Follow the same procedure with the green rice with ingredients including chopped onions, ginger-garlic paste, coconut, mint leaves, coriander leaves, green chillies, poppy seeds, and garam masala. Finally, layer the three starting with green at the bottom, white in the middle, and orange on top.

Fruit cream

Ingredients

Mixed fruits, whipping cream, crushed kiwi, crushed orange, edible food colour, crushed glucose biscuits

Method

Take dessert glasses and fill the bottom with crushed biscuits. Take a blender and whip cream until soft peaks are formed.

For the cream, take three portions. Add two drops of edible food colour in the first portion, crushed kiwi in second, and a small portion of fruits and mix well.

For the second portion, just add a small portion of the fruits and keep aside. For the third portion, add food colour, crushed orange, and the remaining fruits.

On the biscuit layer, pour the green fruit cream topped with white and the top layer should be of the orange fruit cream.

Garnish with fruits as desired and refrigerate for about ten minutes to set before serving.
